Executive Summary : | Indian turmeric, a highly valuable spice, faces challenges in post-harvest processing due to lack of technology and efficient machinery. The traditional method of drying agricultural produce is costly and labor-intensive, leading to product losses. The development of a continuous and efficient turmeric processing unit can help farmers start small processing plants at farm level and improve their economic status. The integrated processing unit consists of machines that produce final polished turmeric with minimal losses, reducing labor and fuel energy expenditure. The unit also aims to obtain good quality curcumin content, volatile oils, and color in processed turmeric. The research methodology involves fabricating machines for processing harvested rhizome, optimizing process parameters, analyzing quality parameters, processing turmeric to value-added products, and explaining the license and operating procedure to locals.
