A process for the preparation of phytase from Jackfruit seed powder using Aspergillus flccum relates to the production of phytase enzyme using solid state fermentation and using jackfruit seed powder as cabon and nitrogen source suitably supplemented with inorganic salts preferably a ammonium nitrate, magnesium sulphate and Sodium chloride preferably at a concentration in the range of 0.01-3.0% in the said solid medium. The aqueous extract obtained as supernatant from processing has a phytase activity in the range of 82-101 mico/gds within a period of 82-144 hours. Phytase is used as a supplement to pig and poultry feed.
