IN239079: A process for preparation of tendered coconut water concentrate

This invention relates to a process for the preparation of tender coconut water concentrate. Conventional thermal concentration methods are not suitable for the concentration of tender coconut water in view of loss of delicate flavor due to long exposure to thermal treatment besides being energy intensive. Therefore, in this invention a hybrid process was adopted for the concentration of coconut water, which includes initial concentration of coconut water by reverse osmosis and further concentration by thermal treatment. This novel approach reduces the time of exposure to heat treatment, thus retaining the flavors of tender coconut to a great extent.
