The project aims to address environmental concerns and nutritional needs by repurposing detoxified plum kernel proteins into nano-encapsulated carriers for allicin, a bioactive compound with health benefits. The project aligns with the principles of a circular economy and eco-friendly practices, and aims to create novel, nutritious, and customizable functional foods. The detoxification of plum kernels has shown that they contain essential amino acids and can serve as long-lasting plant-based polypeptide substrates. The project also plans to leverage 3D food printing technology to craft novel, nutritious, and customizable functional foods. This innovative approach aligns with the principles of a circular economy and eco-friendly practices, aiming to revolutionize waste utilization and the production of functional foods for a healthier future.
