The process deals with the use of clarified coconut sap in place of cane sugar in the preparation of 'spread' by converting it into a free flowing product by concentration under vacuum while retaining its nutrients and processing with acidulant, gelling agent, colourant and flavouring agent such as spice oleoresin.
